Singapore Sling with shiso at Restaurant L
Executive chef Pino Maffeo and manager Mike Paquette have reinvented the classic gin drink, making it this season's must-have cocktail. Not a fan of gin? Get over it -- after a couple of sips, you'll swear you're in Singapore, or at least somewhere nearby that's a little more exotic. The traditional drink is gin with cherry-flavored brandy, but this incarnation uses Bombay Sapphire gin, six tiny Japanese mountain peaches (complete with pits, so be careful), a spoonful of juice from preserved French sweet cherries, club soda, a squeeze of fresh lemon, and ice cubes spiked with shiso, an Asian herb that's sort of a cross between Thai basil and mint. The shiso is crushed and frozen in the cubes, the better to slowly infuse the drink. Garnished with two shiso leaves and a tiny Japanese peach, this is one long tall sip of spectacular summer. 234 Berkeley St., Boston. 617-266-4680.
